The growth of the healthy food market in emerging urban economies has created significant opportunities for the emergence of food-related startups; however, the expansion of demand has not automatically translated into competitive sustainability. This article develops and examines an integrative model explaining how organizational coherence emerges from the interaction between organizational capabilities, financial discipline, and experiential value. The research adopts a mixed-methods exploratory-descriptive design with an analytical orientation, based on surveys administered to healthy food ventures in Bogotá, Colombia, based on surveys of businesses in the sector, complemented by a descriptive analysis of administrative, operational, and sustainable practices. The results show that, although there is a partial adoption of management tools and responsible practices, these do not in themselves generate sustainable competitive advantages. Instead, it is found that coherence between administrative management, financial control, and the value proposition to the customer constitutes the determining factor of organizational performance. The study demonstrates that competitive sustainability does not depend on the isolated implementation of best practices, but rather on the systemic coordination of business decisions. In this sense, competitiveness emerges as a structural phenomenon based on organizational consistency and not solely on operational efficiency or market differentiation. These findings contribute to the literature on strategic management by proposing a reinterpretation of competitive advantage in the context of emerging economies, highlighting the importance of integrating internal and external.
